Guys, I really appreciate you're work but there is a problem, every time I play Pixelmon Dark i see pokemon rarely, I don't know if it's only my problem. Sorry for my bad english I'm italian :D

I had same problem. I think pokémons are not despawning fast enough. Try reducing "Max pokémon spawns per tick" number in spawning mod settings. ;)
The legendary pokemon Phione and Manaphy are breedable which kinda breaks economy on some servers, can we make it so Phione can't breed but maybe Manaphy can only breed ONCE? if not just disable breeding since they both can spawn naturally.

Is there any wiki for this mod? Where I can see when the pokes will evolve, what moves they can have, how to evolve certain pokes, etc.?
There isn't a qiki for this mod, but you can find information about evolutions and how to evolve certain pokes in a normal pokèmon pokedèx

Whenever i try to download 'Pixelmon Dark Official Pack', it's always stuck on 0% & later on something pops up and says "Error downloading a file for the following pack: Pixelmon Dark Official Pack. Failed to download http://144.217.253.201/mods/pixelmon-dark/pixelmon-dark-1.6.2.zip & then it says "Please consult the modpack author".

I would love to see a remodel of Ponyta and Rapidash. They certainly could use it!
Is the corridor an error the update is not working so is at 0% and sometimes for at 15% 62% etc ...

"removing new items" would basically be the same as going back to the previous version of Pixelmon, the "issue" with your server is that the players have to use the same version as the server is using, so if you put your server on Dark, everyone who wants to play must use Dark as well.
